When enjoying a cup of coffee, it's not just the bitterness or acidity that stands out, but also the subtle sweetness that's worth exploring. Caramel sweetness brings warmth and softness, resembling melted brown sugar. Honey sweetness feels smooth and sticky, with gentle floral notes. Brown sugar combines the flavors of caramel and wood, adding depth to the coffee. Fruity sweetness, like mango or strawberry, offers a fresh and lively experience, while almond sweetness provides a gentle harmony. Finally, candy-like sweetness, reminiscent of soft caramels, creates a unique tasting experience. Discovering these sweet flavors not only enriches the coffee experience but also helps you find your perfect cup of coffee.
We haven't added anything to create this sweetness—it's the result of a combination of natural factors and a refined processing method. First, the sweetness originates from the coffee bean itself, where compounds like sugars and amino acids interact to develop rich flavors. When the coffee is roasted, the caramelization process and Maillard reaction help bring out natural sweet notes, from warm caramel to light honey. Factors such as the altitude where the coffee is grown, soil conditions, and climate also profoundly affect the sweetness development. Coffee grown at higher altitudes with mineral-rich soil tends to have more pronounced natural sweetness. Even the processing method plays a crucial role; for example, the wet processing method often highlights the coffee's sweetness and subtlety. Thus, each cup of coffee presents a unique fusion of natural elements and processing techniques, delivering a refined and natural sweetness experience.
The journey of our process begins with the careful selection of high-quality coffee plants from the world’s best coffee-growing regions. We collaborate closely with dedicated farmers to ensure sustainable farming practices, nurturing the plants to their fullest potential. Once harvested, the coffee cherries undergo meticulous sorting and are processed using both traditional and innovative methods, from natural drying to washed processes. Every step, from cultivation to roasting, is carried out with precision, guaranteeing that the flavors are rich and the quality is exceptional. This attention to detail is what makes every cup of Tarmo Coffee a true reflection of our passion and craftsmanship.
We specializes in a wide range of coffee processing methods, carefully designed to highlight the unique qualities of each bean. Our wet (washed) process involves removing the fruit from the coffee cherry before the beans are dried, resulting in a clean, bright flavor with vibrant acidity. In contrast, our dry (natural) process allows the beans to dry with the fruit intact, producing a fuller body and fruitier, sweeter notes. We also offer a variety of other innovative processing techniques, such as honey and anaerobic fermentation, which impart distinct flavor profiles and enhance the coffee's complexity.
